PIE IN THE SKY
PROFILE Spicy & Sweet REGION Speyside AGE 12 Years ABV 51.3% CASK TYPE Refill ex-bourbon hogshead
The Panel had all sorts of images in mind nosing this one neat. Worn for the first time but now muddy welly boots, a gooseberry tart, bacon wrapped asparagus, exotic wood and pine syrup. On the palate there was a lovely fruitiness with a collection of year-round classic pies such as apple and blackberry, lemon meringue, plum and marzipan as well as fig, raspberry and cardamom and not to forget the good old mince pie. Diluted we unwrapped our cinnamon bagel from a greaseproof paper bag before we enjoyed salted caramel, stewed rhubarb and ginger with chocolate, cherry and chilli brownies in the finish.

LEATHER BOUND PETROL STATION
PROFILE Deep, Rich & Dried Fruits REGION Highland AGE 12 Years ABV 57.0% CASK TYPE 1st fill ex-oloroso hogshead
Pencil shavings and charred oak mixed with linseed oil and beeswax on pine wood before polished leather bound together burnt raisins, sticky toffee pudding and dates soaked in diesel. In the mouth a sticky syrup of marmalade, treacle and fruit chutney prepared the taste buds for dark navy rum, cloves, cinnamon and liquorice.
Water took us to places of dark chocolate, espresso coffee and charred wood while toasted hot cross buns merged with figs, pears and walnuts. Flavours now embraced more tropical fruit while molasses and demerara sugar mixed into grapefruit juice and coconut oil. After spending 10 years in an ex-bourbon hogshead this was transferred to a first fill Spanish oak oloroso hogshead.

FIZZY, FRUITY, MINTY AND REFRESHING

A lively and ‘full of fun’ aroma excited the Panel, fruit flavoured love hearts, wine gums, fluffy honey sweetened marshmallows as well as passion fruit and banana Eton mess. Cuts like a knife on the palate at first with a gingery, peppery heat before a cooling Limoncello spritz cocktail (Limoncello, Prosecco and soda) came to the rescue.
After reduction, the summery scent from an Amalfi coast lemon sorbet, watermelon granita and cream stuffed cannoncini combined with the taste of a kumquat mojito consisting of rum, sugar water, Prosecco, lime, fresh mint leaves and quartered kumquats. We experienced the Italian sweet life – la dolce vita!
